In Japanese, Kai means ocean — our pantry, our passion, our provider. To means the Big Dipper, the ancient constellation that sailors have trusted for centuries to find Polaris and chart their journey home. Together they form a single name: the name of an Akita who sat beside me, without fail, for ten years. Wherever I was, he was there. His devotion lives in every corner of this room.
At Kaito Room, the ocean gives us everything. And our Itamae — our master sushi chef — is your To. Your guide. Course by course, piece by piece, he leads you through a culinary constellation. This is our Omakase.
THE GATE
You have already passed beneath the Torii. In Japanese tradition, crossing beneath a Torii Gate is sacred—a leaving behind of the earthly, a crossing into something higher and more pure. We built ours by hand, in wood, at the entrance of Kaito Room, so that every guest who enters may leave all worries at the threshold.
What awaits within is Divino — divine in its craft, and as our Spanish-speaking neighbors know, simply delicious.
